
One of our most successful activities during quarantine was cooking. I finally crossed off a ton of recipes I had been pinning for years and we made so many favorites that are definitely going to be on constant rotation in our apartment. Today I’m sharing our 10 favorite easy recipes we made and would love to hear if you made any of them too!

1. 15 Minute Garlic Butter Ramen

This recipe is a great one to make when you need to clean out the fridge and use up veggies! We added broccoli, mushrooms and chicken and it’s so easy and delicious! We made it multiple times over quarantine and will be a new favorite weekly rotation meal.

2. Healthy Homemade Bagels

Making homemade bagels seemed daunting until I found Cheat Day Eats recipe. Super easy and healthier since they are made with greek yogurt and baked, these became a staple on the weekends!

3. Creamy Tuscan Chicken

Brighton originally shared this recipe and oh my goodness, the hype is real! SO easy, we also made pasta on the side to top the creamy chicken over and it was the first recipe my mom requested on making once I came home.

4. Skinny Chicken Pot Pie

I’ve shared before how much I love this recipe and it’s the ideal comfort meal, especially when paired with cornbread muffins or biscuits!

5. One Pot Creamy Cauliflower Mac and Cheese

Don’t let the cauliflower fool you, this recipe is oh so creamy and delicious! We made this multiple times and it’s my new go-to mac and cheese recipe. We also baked it for the last twenty minutes and topped with extra cheese and breadcrumbs to get a crispier topping.

6. Greek Lemon, Rice and Chicken Soup

Our favorite diner food from home is the Detroit Greek diner Leo’s Coney Island so one night we decided to recreate a favorite Michigan meal of lemon rice soup and chicken finger pitas! This hit the spot and the soup was so delicious and will be making it this winter as one of my weekly soups to have on hand for lunch.

7. Lil Frankie’s Lemon Pasta

Lil Frankie’s is one our favorite Italian restaurants in city so when the chef and owner Frank shared the recipe on his Instagram stories (saved in his highlights!) we had to make it ourselves. Lemony, refreshing and comforting this is the easiest recipe and a crowd favorite.

8. Italian Wedding Soup

I shared this recipe as one to make at the beginning of quarantine and it was an easy favorite. Hearty and comforting but not too heavy, this was an easy favorite to make.

9. Copycat Spicy Rigatoni Vodka

When you can’t have a special night at Carbone, bring Carbone to your apartment! This recipe tastes exactly like their famous spicy rigatoni vodka and it was such a fun way to make it a special night inside.

10. Souper Creamy Lemon Butter Orzo

Another favorite from Half Baked Harvest! Truly our quarantine queen. This was another easy recipe that we added more veggies and protein too and will be a favorite again to make each week when you’re looking for something hearty and comforting.
